My name is Steve Nice. My wife Sheridan and I own Mona Lisa’s Cafe in Johnson City, Tennessee.
Several years ago, a regular customer named Renee had come in for a bowl of our home-made soup which we serve with a fresh baked sourdough roll. As she buttered the roll, she looked at me with a sly smile and said that she was cheating on her gluten-free diet. She went on to say that since she had been gluten-free, her joint pain had gone away.
When I got home that evening, I told Sheridan about what Renee had said. We had been suffering with joint pain for years but figured it was just part of getting old. None-the-less, we agreed to go gluten-free for three months to see if it would make a difference. Amazingly, it did. We then went back to eating gluten and sure enough, within a couple of weeks, our joint pain started to come back.
We had just discovered how to rid ourselves of joint pain but now we were curious about what had caused it in the first place.
For the next two years, I searched for reasons for what had happened. I researched wheat production and possible causes for the rising number of people suddenly sensitive to gluten. What I learned was that there are a lot more “bad actors” in our diet than just wheat. But, my first question was, is it possible to create a dietary supplement that can ward off the ill effects of gluten without having to go on a gluten-free diet.
I went to our local university innovation lab and asked the Director about getting assistance with formulating a supplement that could help people who suffer from the effects of gluten. With the Director’s assistance, I was able to enlist a PhD nutritional biochemist and a Dr. of Pharmacy.
Our team began work in the spring of 2014 and by the summer of this year, we had formulated a digestive powerhouse.
